I have two questions about making peach jam?

i just made peach jam yesterday using about 8 cups of blended peach. How many packets of pectin should I be using? I put in one packet of pectin but it doesn't seem to be enough because the consistency doesn't look like jam. Should I add another packet of pectin? My second question is what is the difference between jam and jelly? thanks.

For 8C of peaches you need 2 pkts, 1 3/4oz ea. It won't be set-up for 24 hours. Jelly is the juice, Jam is the pulp (meat of the fruit)
Reply:If the consistency isn't what you want, then adding another packet of pectin may do it. Be sure that you also have the proper amount of sugar as well.

As to jam versus jelly - jam just has more of the fruit in it, while jelly is mostly made out of the juice, and is usually clearer.
Reply:If it is already done than you must add corn starch with water to it proportianate to how much jam is made.
Reply:FREEZER PEACH JAM
