How do I made a Peach Cobbler?

I want to make a Peach Cobbler the Canadian way?





Best answer goes to somebody who can give me a traditional Canadian Recipe for a lovely Peach Cobbler. Also some tips and cooking instructions would be very nice.

Preparation Method : Bake





Harvest an orchardful of flavour with this old-fashioned cobbler.





Ingredients











7 cups (1.75 L) sliced pitted peeled peaches or nectarines








1/3 cup (75 mL) granulated sugar








1 tbsp (15 mL) cornstarch








1 tbsp (15 mL) lemon juice








Biscuit Topping








1 cup (250 mL) all-purpose flour








1/4 cup (50 mL) granulated sugar








1 tsp (5 mL) baking powder








1/4 tsp (1 mL) baking soda








pinch salt








1/4 cup (50 mL) cold butter








Biscuit Flavouring








1 tsp (5 mL) vanilla








3/4 cup (175 mL) buttermilk











Preparation








In large bowl, gently toss peaches with sugar, cornstarch and lemon juice. Scrape into 8-inch (2 L) square glass baking dish.





Biscuit Topping: In bowl, whisk together flour; sugar; baking powder; baking soda and salt. Using pastry blender or 2 knives, cut in butter until crumbly.





Biscuit Flavouring:In measuring cup, stir vanilla into buttermilk; drizzle over flour mixture, stirring with fork to form soft, sticky dough. With spoon, drop dough in 9 evenly spaced mounds over fruit.





Bake in 400°F (200°C) oven for about 35 minutes or until bubbly and topping is light golden and no longer doughy underneath when lifted with spoon.

Peach Cobbler can be made quickly on top of the stove in a single pan.





pie crust mix (sold in a two-pack of sticks resembling sticks of butter)


8 oz can of canned sliced peaches


sugar to taste (brown if you%26#039;ve got it)


cinnamon to taste


a few teaspoons of water


In your greased all-purpose skillet, mix in appropriate amount of water with 1/2 of one pie crust stick. Add sugar and cinnamon. The mixture will become crumbly as it cooks. Move the crust around in the pan allowing the crumbs to brown evenly. When browned, stir in the peaches and the juice and continue cooking until peaches are heated through. Serve your Peach Cobbler in a bowl or eat it right out of the skillet.

1/2 cup sugar


1 teaspoon baking powder


1/2 cup milk


2 cups sweetened peaches (berries, or apricots)





preheat the oven to 350. Put the butter in a baking dish and melt it in the oven. Mix together the flour, sugar, baking powder, and milk. Pour the batter over the melted butter and cover it with the fruit. Bake for about an hour or until the top is golden brown. Serve hot, warm, or at room temp. w/ heavy cream or vanilla ice cream.





You can double this recipe.


It can also take extra flavoring -- a little cinnamon w/buleberries, a little grated lemon zest w/blackberries





The batter rises mysteriously to the top, even though it goes in on the bottom of the pan.

Directions:





Melt the butter in a 9 x 13 pan.

Bake 45 minutes in 350 degree oven.

Peaches are plentiful midsummer and peach cobbler is a delicous way to enjoy this fruit of the season. We have found that the best peaches to use with this recipe are the yellow variety. White peaches, although also delicious in cobbler, are a little too delicate and don%26#039;t hold their flavor as well as the yellow when cooked.





4 lbs of ripe yellow peaches, peeled, pitted, and sliced into 1/2 inch thick wedges (about 12 cups)


2/3 cup sugar


1/2 cup quick cooking tapioca


1 1/2 teaspoons grated lemon peel


1 1/2 tablespoons lemon juice


1 1/2 teaspoons vanilla


2 cups all purpose flour


1 1/4 teaspoons baking powder


1/2 teaspoon ground nutmeg


2/3 cup (about 6 oz) butter, cut into 1/2 inch chunks


2/3 cup whipping cream





1 In a large bowl, mix peaches, 2/3 cup sugar, and the tapioca, lemon peel, lemon juice, and vanilla. Let stand at least 15 minutes or up to 30 minutes to soften the tapioca, stirring several times.





2 In another bowl, combine flour with remaining 1/3 cup sugar, the baking powder, and nutmeg. With a pastry blender or your fingers, incorporate butter into flour mixture until mixture resembles coarse crumbs. Add cream and stir just until dough holds together.





3 In a buttered shallow 2 1/2 to 3 quart baking dish, spread fruit level. Using your hands, crumble dough evenly over fruit.





4 Bake in 350°F oven until fruit mixture bubbles in center and topping is golden brown, 50-60 minutes.





Delicious with vanilla icecream or whipped cream.

1 1/2 cans of sliced Freestone peaches


cinnamon-just a little

butter


nutmeg (pinch)





This is one easy peach cobbler that can be made with a store-bought crust and canned peaches.


Preheat oven to 350. Move the bottom crust into an 8 in square pan, pinch and shape into place. Put in peaches and juice from 1 can (more if you like), add pats of butter, sprinkle with sugar, cinnamon, and just a pinch of nutmeg.





Top with a prepared purchased top crust, pinch and shape over bottom crust to seal. Cut slits and sprinkle lightly with sugar if desired.





Put in 350 oven and bake until brown and bubbly top and bottom.
